In 2020 my biggest goal is to watch what I eat. 2019, was full of saying yes to too many things. I learned a lot about my eating habits in that year. Being more mindful of what I consume everyday will help me resist cravings and make me feel my best self. A health trend I've looked into is the Keto Diet. A high fat and low carb diet. My choice to go with this health trend is because I like the idea of burning fat rather than trying to burn carbs while exercising. While being Keto I am still able to also eat all the things I love like diary, cheese and meat! I was never really a big fan of bread or rice so cutting carbs from my eating habits was no big deal. If your interested in keto, I highly suggest it! With starting this diet I have had to be creative with what recipes I use to make those staple meals. All of the recipes below are some of my favorites and make me excited to hit the kitchen more often in the new year! Feel free to share your favorite keto recipes below as well. - J Crispy Zucchini Fries by The Best Keto Recipes This is so tasty and tastes like fries without the guilt. Make sure to coat your zucchini thoroughly so it doesn't taste bland and always season to taste! Keto Cauliflower Mac and Cheese by How To This and That Okay. No JOKE. This is hands down the best mac n cheese recipe ever, for keto people! I have made this for my lumberjack eating husband and he loves it more than regular mac and cheese. Its our new family favorite. Baked Pesto Chicken by Easy Family Recipes Tasty Tasty Tasty. I love this dish and the flavors. Who knew pesto and cream cheese would be so great together. I loved topping this with bread crumbs and also fried onions for that extra crunch. Low Carb Stuffed Spaghetti Squash Lasagna Boats by Wholesome Yum No joke, I make this once a week and it is delicious! I can barely taste the difference of regular pasta (which is no for keto) with this type of pasta alternative. I use homemade marinara and it makes the difference in taste. Keto Deviled Eggs Salad by Sarcastic Parent This is a tasty Egg Salad that will make you feel full but not fat. The crunchy bacon texture adds the perfect amount of smokiness to the egg salad. I love baking the bacon in the oven, comes out less greasy! Keto Chicken Enchilada Soup by Sparkles N Sprouts Enchilada Soup is very Keto Friendly and this recipe is one of my favorites. I love using Avocado oil instead of the recommended Olive oil. Keto Broccoli Cheese Soup by InstruPix Cauliflower and Broccoli are two very Keto friendly veggies and they are some of my favorites. This simple soup recipe is what I love about this health trend, it simplifies the products you need to make plentiful and delicious meals. Enjoy these recipes!

Vegan snacks are my absolute favorite for road trips especially those that require energy. We recently took a trip to Southern Utah and with all the hiking, we needed to pack snacks that were fast to make and provided mass amounts of energy for our long treks ahead. Zuppa Toscana is probably one of my favorite dishes on the planet. I use this recipe for whenever I need to make something effortless and quick for my family of 2, especially on a busy weeknights. Im am a sucker for a good soup dish and this satisfies all the tasty needs. It is so quick and easy that it will only take max of 20 minutes to prepare! Anything to save some time am I right?
The Italian Sausage and Kale are the two most flavorful part of the dish and who knew kale could be such a staple in a soup?! I was first introduced to this recipe by my brother and sister in law and it has quickly become a family favorite. I find myself making this once every few weeks and I will never get tired of it.
