Vegan snacks are my absolute favorite for road trips especially those that require energy. We recently took a trip to Southern Utah and with all the hiking, we needed to pack snacks that were fast to make and provided mass amounts of energy for our long treks ahead.
The chickpea recipe is too die for and I mean you cannot go wrong with squash chips. Love how easy it was to prepare and pack! Enjoy these recipes and share below what are some of your favorite Vegan snacks!

Zuppa Toscana is probably one of my favorite dishes on the planet. I use this recipe for whenever I need to make something effortless and quick for my family of 2, especially on a busy weeknights. Im am a sucker for a good soup dish and this satisfies all the tasty needs. It is so quick and easy that it will only take max of 20 minutes to prepare! Anything to save some time am I right?
The Italian Sausage and Kale are the two most flavorful part of the dish and who knew kale could be such a staple in a soup?! I was first introduced to this recipe by my brother and sister in law and it has quickly become a family favorite. I find myself making this once every few weeks and I will never get tired of it. At least not anytime soon.
