Vegan snacks are my absolute favorite for road trips especially those that require energy. We recently took a trip to Southern Utah and with all the hiking, we needed to pack snacks that were fast to make and provided mass amounts of energy for our long treks ahead. The Italian Sausage and Kale are the two most flavorful part of the dish and who knew kale could be such a staple in a soup?! I was first introduced to this recipe by my brother and sister in law and it has quickly become a family favorite. I find myself making this once every few weeks and I will never get tired of it.
